A stylish, attractive young woman, Célestine (Jeanne Moreau), arrives from Paris to become chambermaid for an odd family at their country chateau. The period is mid-1930s, and the populace is astir with extremist politics, right and left. The Monteil's household consists of a childless couple, the frigid wife's elderly, genteel father, and several servants, including Joseph the groom (Georges Géret) who's a rightist, nationalist, anti-Semitic, violent man. The wife (Françoise Lugagne) runs a rigidly tidy house; she would like to please her virile husband physically, but cannot, due to pelvic "pain." M. Monteil (Michel Piccoli) amuses himself by hunting small game and pursuing all the females within range – the previous chambermaid seems to have left pregnant and had to be "bought off.

Two migrant field workers in California during the Great Depression—George Milton (Burgess Meredith), an intelligent and quick-witted man (despite his frequent claims of being "not that smart"), and Lennie Small (Lon Chaney, Jr.), an ironically-named man of large stature and immense strength who, due to his mental disability, has a mind of a younger child—hope to one day attain their shared dream of settling down on their own piece of land. Lennie's part of the dream, which he never tires of hearing George describe, is merely to tend to (and touch) soft rabbits on the farm. George protects Lennie at the beginning by telling him that if Lennie gets into trouble George won't let him "tend them rabbits." They are fleeing from their previous employment in Weed where they were run out of town after Lennie's love of stroking soft things resulted in an accusation of attempted rape when he touched and held onto a young woman's dress (not shown, but mentioned).

In 1885 France, chambermaid Celestine begins her new position at the Lanlaire family home, a rural mansion, with the intention of moving up the social ladder. She starts working on her new employer, Monsieur Lanlaire, and he soon takes a liking to her, preferring her company to that of his dominant wife. Soon the excentric neighbor, Captain Mauger becomes quite obsessed with having her working for him instead, and offers to marry her as reward for her coming to live with him, which would give her considerable wealth. Monsieur Lanlaire's sickly son Georges temporarily returns home to the estate, and in an attempt to make him stay longer, his mother does her best to make the attractive Celestine more beautiful by buying her fancy clothes, and orders her to take extra good care of her son.

The film opens in documentary fashion at a Sardinian elementary school that six-year-old Gavino (Saverio Marconi) is attending. His tyrannical peasant father (Omero Antonutti) barges in and announces to the teacher and the students that Gavino must leave school and tend the family sheep. Under his father's watchful eyes and the victim of his sadistic behavior, Gavino passes the next fourteen years tending sheep in the Sardinian mountains. There he begins to discover things for himself and begins to rebel against his father.
The scene is all filmed from a stationary camera. On screen is a large anvil with a blacksmith behind it and a striker to either side (portrayed by Edison employees). The smith uses a heated metal rod he has removed from a fire and places it on the anvil. All three begin a rhythmic hammering. After several blows the metal rod is returned to the fire. One striker pulls out a bottle of beer, and they each take a drink. Following this drink they then resume their work.
Four peasant families working farms for the same landlord scrape out a meager existence in 1898 in the campaign around Bergamo. Over the course of a year, children are born, crops are planted, animals are slaughtered, couples are married, stories and prayers are exchanged in the families's shared farmhouse. Undercurrents of revolution are seen by the peasants but largely ignored, as a communist rabble-rouser gives a speech at a local fair and when a newlywed couple visit the big city of Milan and witness the arrest of political prisoners. When spring comes, one of the four families is forced off their land by the incensed landlord, and the remaining families watch them go, praying for them and recognizing their own fragile existence.
