Martin Ritt directed. Screenwriter Julius J. Epstein was nominated for an Academy Award for adapting the story from two novels by Peter De Vries: The Blood of the Lamb and Witch's Milk. Epstein later adapted another De Vries novel for the film Reuben, Reuben.
Synopsis

Three disparate travelers, a disillusioned preacher (William Shatner), an unsuccessful prospector (Howard Da Silva), and a larcenous, cynical con man (Edward G. Robinson), meet at a decrepit railroad station in the 1870s Southwest. The prospector and the preacher were witnesses at the memorable rape and murder trial of the notorious bandit Juan Carrasco (Paul Newman). The bandit duped an aristocratic Southerner, Colonel Wakefield (Lawrence Harvey), into believing he knew the location of a lost Aztec treasure. The greedy "gentleman" allowed himself to be tied up while Carasco assaulted his wife Nina (Claire Bloom). These events lead to the stabbing of the husband and Carrasco was tried, convicted, and condemned for the crimes.

Chicago Examiner reporter Hildebrand "Hildy" Johnson (Jack Lemmon) has just quit his job in order to marry Peggy Grant (Susan Sarandon) and start a new career, when convict Earl Williams (Austin Pendleton) escapes from death row just prior to his execution. Earl is an impoverished, bumbling leftist whose only offense is stuffing fortune cookies with messages demanding the release of Sacco and Vanzetti, but the yellow press of Chicago has painted him as a dangerous threat from Moscow. As a result the citizenry are anxious to see him put to death.

Sorrowful Jones (Matthau) is a gloomy, cantankerous bookie circa 1934, who is confronted by Carter, a gambler who cannot pay a $10 debt. He ultimately gives his 6-year-old daughter (Stimson) to Sorrowful's gangster-run gambling operation as a "marker" (collateral) for a bet. Close to the end of the American Civil War, injured Yankee soldier John McBurney is rescued from the verge of death by a twelve-year-old girl from an all-girl boarding school in Louisiana. At first the all-female staff and pupils are scared, but as John starts to recover, he charms them one by one and the sexually repressed atmosphere becomes filled with jealousy and deceit, with the two teachers and some of the girls clearly attracted to him.

Down on his luck Louisiana horse trainer Lloyd Bourdelle (Walter Matthau) dreams of winning the All American Futurity at Ruidoso Downs in New Mexico. Lloyd has three sons, Buddy, Randy and Casey. Buddy (Andrew Rubin) helps his father train horses, while Randy (Steve Burns) rides them in races. Lloyd takes Casey (Michael Hershewe) and Randy to a small bush track, to try to make some money by racing Casey's small pony, Gypsy. They find a match race with Mr Marsh (Robert Webber) and his daughter Kelly (Susan Myers), but play a trick on Marsh by tying a live chicken to Gypsy's saddle. Gypsy wins the race, but Marsh doesn't pay up, complaining that Lloyd cheated him by not having a rider on Gypsy. Lloyd laughs and remarks that the chicken is the best live jockey around. The races end and Lloyd takes Randy and Casey home.

Bernard Chanticleer (Peter Kastner), called "Big Boy" by his parents, is 19 but still lives with his overbearing, clinging mother (Geraldine Page) and his commanding, disapproving father (Rip Torn), who is Curator of Incunabula at the New York Public Library. Bernard also works as a low-level assistant at the library, where his father is constantly monitoring and admonishing him. His father decides it's time he grew up and moved out of the family home in Great Neck and into his own Manhattan apartment. His mother is not happy about letting him go, but acquiesces to her husband and arranges for Bernard to live in a rooming house run by nosy, prudish Miss Nora Thing (Julie Harris). Miss Thing inherited the building on the condition that her late brother's aggressive pet rooster be allowed to occupy the fifth floor, which Bernard must pass to get to his room. Miss Thing reassures Bernard's mother that the rooster only attacks girls, especially young pretty girls, to which Bernard's mother responds that her son isn't interested in girls yet, but arranges that Miss Thing will spy on Bernard and report any "female" activity. Bernard's mother also constantly mails locks of her hair to Bernard at his new residence.

Bearing similarities to Altman's 1975 film Nashville, along with a plotless structure, HealtH chronicles the progress of a health-food convention held at a luxury hotel in St Pete Beach, Florida. As the convention takes place, the members of an organization called HealtH hold a campaign to find out who will become its President. (Their name stands for "Happiness, Energy and Longevity through Health"; it also serves as their slogan.)
