In 1874 Australia, newly installed Police Inspector Radford boasts to wealthy Hugh Clarkson that he will capture the famous outlaw Stingaree, who has returned to the area. Hilda Bouverie is an impoverished servant working for the Clarksons. Mr. Clarkson is kind, but his wife treats Hilda and Annie, another servant, as menials. Mrs. Clarkson is excited by the news that Sir Julian Kent, a renowned British composer, is going to be her guest. She dreams of performing before him and becoming an opera star, but her singing is not good. Hilda begs to be allowed to sing as well, but Mrs. Clarkson turns her down. Meanwhile, Sir Julian stops over at a tavern, where Radford and his colleagues are drinking. Calamity Jane (Doris Day) rides into Deadwood, South Dakota as shotgun messenger on the stagecoach. The local saloon bar, the Golden Garter, sends for beautiful women to appear on the stage and entertain the residents of a town with few females. Unfortunately, the men are anything but pleased when the latest "woman" turns out to be a man named Francis Fryer (Dick Wesson), who does a stage act in drag (reluctantly) and goes under the name Frances Fryer. The saloon owner was misled by the girlish-sounding name when reading an advertisement in the newspaper. The men begin to storm out. Calamity, thinking quick in all the panic, vows to get them the one woman they are all drooling over: singer Adelaid Adams (Gale Robbins), who is in Chicago. Francis Fryer points out that Adams wouldn't be seen dead in that town but Calamity is still determined to bring her. In the 1890s, a group of "Harvey Girls" - new waitresses for Fred Harvey's pioneering chain of Harvey House restaurants - travels on the Atchison, Topeka & Santa Fe Railway (AT&SF) to the western town of Sandrock, Arizona. On the trip they meet Susan Bradley (Judy Garland), who travels to the same town to marry the man whose beautiful letters she received when she answered a "lonely-hearts" ad. A backwoodsman named Adam Pontipee comes into town to search for a bride. After being laughed at by the owners of the town's feedlot store he goes out in search of a wife. He comes upon the local tavern where he meets Milly. He and Milly agree to marry despite knowing each other for only a few hours. On the journey home Milly talks about how she is excited to be cooking and taking care of only one man, visibly upsetting Adam.
