In 1881 in Old Fort Sumner, New Mexico, William H. Bonney, known as Billy the Kid (Kris Kristofferson), is passing the time with friends shooting chickens for fun. An old friend of Billy's, Pat Garrett (James Coburn), rides into town with Deputy Sheriff J.W. Bell (Matt Clark) and joins the diversion. Later, over drinks, Garrett informs Billy that the electorate want him out of the country, and that in five days, when he becomes Sheriff of Lincoln County, he'll make Billy leave.

Bank robber Jim Larsen is handcuffed to Deputy Marshal George Allison (Francis De Sales) who is taking Larsen aboard a train to begin a 5–10 year prison sentence. Without animosity, Larsen tells the deputy that he will use his time in prison to plan more bank robberies. This new robbery would be foolproof as Larsen feels that he was only caught by using a partner; the next time will be singlehanded. Boarding the train, Larsen overpowers the deputy, takes his pistol and handcuffs one of his arms to the guardrail on the rear car of the train. Suddenly, Larsen's younger brother Danny (Ron Hayes) unexpectedly comes from the train to free Larsen, even though Larsen was handling his escape fine. The elder Larsen chides Danny that he does not need help from anyone.

In 1950, attorney Charles Phalen is contacted by an elderly man named "Brushy Bill" Roberts. When his ranch hands abandon him to join a gold rush, rancher Wil Andersen (John Wayne) is forced to find replacement drovers for his upcoming 400-mile (640 km) long cattle drive. He rides into deserted Bozeman, Montana. There, Anse Peterson (Slim Pickens) suggests using local schoolboys. Andersen visits the school but departs unconvinced. The next morning, a group of the boys show up at Andersen's ranch to volunteer for the drive. Andersen tests the boys' ability to stay on a bucking horse. As the boys successfully take turns, Cimarron (A Martinez), another young man slightly older than the others, rides up. After successfully subduing and riding the test horse, Cimarron gets into a fight with Slim (Robert Carradine), the oldest of the boys. Andersen, though impressed by Cimarron's abilities, has misgivings because of his angry nature and sends him away. Andersen reluctantly decides to hire the boys.

But there's something about The Undertaker that makes this worse since there's a rumor that he killed Isaiah's brother, Jedediah.

In the American Old West of 1874, construction on a new railroad led by Lyle (Burton Gilliam) runs into quicksand. The route has to be changed, which will require it to go through Rock Ridge, a frontier town where everyone has the last name of "Johnson" (including a "Howard Johnson," a "Dr. Samuel Johnson," a "Van Johnson" and an "Olson N. Johnson"). The conniving State Attorney General Hedley Lamarr (Harvey Korman) – who constantly has to correct people who call him "Hedy", the name of a movie star, instead of "Hedley" – wants to buy the land along the new railroad route cheaply by driving out the townspeople. He sends a gang of thugs, led by his flunky assistant Taggart (Slim Pickens), to scare them away, prompting the townsfolk to demand that Governor William J. Le Petomane (Mel Brooks) appoint a new sheriff. Lamarr persuades the dim-witted Le Petomane to select Bart (Cleavon Little), a black railroad worker who was about to be hanged, as he believes a black lawman will so offend the townspeople that they will either abandon Rock Ridge or lynch the new sheriff, with either result paving the way for him to take over the town.
