When his ranch hands abandon him to join a gold rush, rancher Wil Andersen (John Wayne) is forced to find replacement drovers for his upcoming 400-mile (640 km) long cattle drive. He rides into deserted Bozeman, Montana. There, Anse Peterson (Slim Pickens) suggests using local schoolboys. Andersen visits the school but departs unconvinced. The next morning, a group of the boys show up at Andersen's ranch to volunteer for the drive. Andersen tests the boys' ability to stay on a bucking horse. As the boys successfully take turns, Cimarron (A Martinez), another young man slightly older than the others, rides up. After successfully subduing and riding the test horse, Cimarron gets into a fight with Slim (Robert Carradine), the oldest of the boys. Andersen, though impressed by Cimarron's abilities, has misgivings because of his angry nature and sends him away. Andersen reluctantly decides to hire the boys.

The story follows a young teacher, Pat Conroy (played by Jon Voight), in 1969 assigned to isolated "Yamacraw Island" off the coast of South Carolina and populated mostly by poor black families. He finds out that the children as well as the adults have been isolated from the rest of the world and speak a dialect called Gullah, with "Conrack" of the novel's title being the best they can do to pronounce his last name. The school has only two rooms for all grades combined, with the Principal (Madge Sinclair) teaching grades one through four and Conroy teaching the higher grades. Conroy discovers that the students aren't taught much and will have little hope of making a life in the larger world.

Dr. Peter Carey (James Coburn) is a pathologist who moves to Boston, where he starts working in a hospital. He soon meets Georgia Hightower (Jennifer O'Neill), with whom he falls in love. Set in 1905, the film follows the exploits of the likable but raffish Boon Hoggenbeck (Steve McQueen), who takes an interest in a new car, a new 1905 Winton Flyer that is the property of a man named Boss (Will Geer), the patriarch of the McCaslin family, who live in the Mississippi area where Boon lives. When the taking of the car first by Boon and then by Ned (Rupert Crosse) (they show themselves to be reivers, or thieves, in the film's start, hence the title) leads to a public brawl, the local magistrate lets them off by a bond that Boss pays on the condition both men stay out of trouble and further away from the car while he is away with family to tend to a funeral. That is soon changed by Boon, who takes the car again to go up to Memphis to see his woman Corrie (Sharon Farrell) and talks his young friend Lucius (Mitch Vogel) into going for the ride. Ned stows away as well, but Boon grudgingly allows him to come. Other characters include a horse that loves sardines and races for them, a friendly bordello madam and her amiable employees, and a man with a horse who lives near an impassable sinkhole full of mud for which he charges expensive rates to get both carts and cars through.
