Jack Beauregard (Henry Fonda) is an aging legendary gunslinger who wants to retire in peace in Europe to get away from young gunmen constantly trying to test themselves against the master. The film opens with three gunmen attempting to ambush Beauregard in a barbershop. After Beauregard has dispatched them, the barber's son asks his father if there is anyone in the world faster than Beauregard, to which the barber replies "Faster than him? Nobody!"
Twenty years after the event in the first Django, the title character has left the violent world of gunslinger to become a monk. Living in a monastery, he wants no more of the violent actions he perpetrated. Later, he learns that along the way, he had a daughter who is working for ruthless criminals in a mine, for which they hope to get rich from the spoils. Local crime boss Manuel kidnaps Dolores, the daughter of rich rancher Mendoza. Her father hires Django to free his child. Unfortunately Django fails to surprise Manuel's men. They punish him severely. A friendly woman finds him and thanks to her tendance he proves able to recover. To his dismay she dies when Manuel's gang robs a stagecoach. Django becomes painfully aware he has rested to long. He picks up his revolver again and does what he does best.

American and Mexican outlaws rob a US Army gold transport. After the successful ambush the Americans attempt to keep the booty for themselves by planning to execute the Mexicans, though one of their number breaks free and kills several of their horses with a machete. The Mexicans dig their own grave and are shot, however their leader is badly wounded and survives being buried alive. He is rescued by a pair of Indians who treat his wounds in exchange for his addressing their people on what he has seen of the afterlife during the period he was "dead". They also give him golden bullets to use for his revenge. Pursuing the gang that killed his comrades, the Stranger finds shelter among locals but Templer, a saloon owner, Hagerman an Alderman who keeps his wife a prisoner in their home and Sorrow, the leader of a band of black garbed homosexuals hear about the gold and want it for themselves.

Although technically a Spaghetti Western, the plot of Texas, Adios plays more like a traditional American western film. Franco Nero plays two-fisted, taciturn Texas sheriff, Burt Sullivan, a man committed to duty and justice but possessed by a desire for revenge. Sullivan, along with his younger brother, crosses the border to bring wealthy and sadistic Mexican crime boss Cisco Delgado (José Suárez) to justice for the murder of their father. Eventually joining forces with a group of Mexican revolutionaries, Sullivan and his brother soon find themselves at the center of a bloodbath.
