The film was directed by Walter Hill; it was written by John Milius, Fred Rexer and Deric Washburn (the latter collaborated with Michael Cimino on Silent Running and The Deer Hunter).
Extreme Prejudice is an homage, of sorts, to The Wild Bunch, a western directed by Sam Peckinpah, with whom Hill worked on The Getaway. Both films end with a massive gunfight in a Mexican border town.
The title originates from "terminate with extreme prejudice," a phrase popularized by Apocalypse Now, also written by John Milius.
The character of Jack Benteen was loosely based on Joaquin Jackson, now a retired Texas Ranger. Nolte spent three weeks in Texas with Jackson learning the day-to-day activities of a Ranger. Nolte took what he learned and incorporated it into his character; the mannerisms and dress.

Monty Brewster is a Minor League Baseball pitcher with the Hackensack Bulls. A squad of nine Louisiana National Guard soldiers convene in a Louisiana swamp for weekend maneuvers. A man is discovered breaking into his own jewelery shop in the dead of night. Questioned closely, it is discovered that his wife is being held hostage at their home by Steve, a brutal extortionist who demands the diamonds in the shop's safe in exchange for the woman's life. After Steve kills the family maid, FBI agent Warren Stantin (Sidney Poitier) hands over the diamonds, but Steve kills the jeweller's wife anyway, and escapes. Feeling that he has failed, Stantin becomes obsessed with finding Steve, and he chases Steve into the rugged forests of the state of Washington, where Steve joins up with a group of sportsmen who plan to trek into the wilderness on a fishing trip. U.S. Marine Tommy Riordan visits his father, Paddy Conlon (Nick Nolte), a recovering alcoholic who has returned to his Catholic faith. Tommy had to run away from Paddy with his dying mother when he was just a boy due to Paddy having previously been an abusive alcoholic, and has never quite forgiven him. Paddy tries to convince him that he has changed, but to no avail. The next day, Tommy enters a gym where he beats a professional fighter named Pete "Mad Dog" Grimes (Erik Apple) unconscious in less than 30 seconds, in a fight which is filmed via a cell phone's video camera and later uploaded to the Internet, where it goes viral. Tommy learns about a winner-takes-all mixed martial arts tournament called Sparta in which the winner will receive $5,000,000. Tommy asks his father to help him train for the tournament, but only under the condition that Paddy does not try to reconcile their relationship.
